Ingredients
4 cups diced sweet potatoes
1 lb. ground beef, browned
14 oz. can diced tomatoes with liquid
2 cups water or beef broth
1 cup diced yellow onion
1 cup diced red bell pepper
3 cups riced cauliflower
1 teaspoon minced garlic
2 chipotle peppers in adobo sauce, chopped (adjust amount to your liking)
1 teaspoon ground cumin
1/2 teaspoon paprika
2 teaspoon chili powder
1/4 teaspoon ground black pepper
2 teaspoons sea salt
Directions
Combine all ingredients in slow cooker. Mix well and cook on low for 8 hours.
Topping Options: Chopped cilantro, green onions, chopped avocado, shredded cheese, sour cream.
Makes 6 servings.
