Spicy Lemongrass-Lamb Lettuce Wraps
Lettuce wraps that are well worth the effort—arrange on your prettiest platter, and serve as an appetizer.
Ingredients
- 3 Tbs fish sauce, divided
- 3 Tbs lime juice, divided
- 2 tsp garlic cloves, finely chopped and divided
- 1 tsp cornstarch
- 2/3 lb lamb shoulder, trimmed and finely chopped
- 2 Tbs light brown sugar
- 1 tsp chopped Thai bird chilies or crushed red pepper flakes
- 2 Tbs peanut oil
- 2 shallots, finely sliced
- 1 cup mint leaves, coarsely chopped
- 2/3 cup jicama, peeled, and cut into 1/4-inch pieces, squeezed dry
- 1/4 red onion, finely chopped
- 8 sprigs cilantro, finely chopped (leaves and stems)
- 2 stalks lemongrass, white part only, sliced and finely chopped
- 1 Tbs galangal or ginger root, finely chopped
- 1/2 cup roasted peanuts, chopped and divided
- 2 heads iceberg lettuce, inner leaves, each leaf trimmed to about 4-inches wide
Directions
- In medium bowl, combine 1 tablespoon fish sauce, 1 tablespoon lime juice, 1 teaspoon garlic, and cornstarch. Add lamb and toss to coat, set aside.
- To make sauce, in small bowl combine remaining 2 tablespoons fish sauce, 2 tablespoons lime juice, 1 teaspoon garlic, brown sugar, and chilies or crushed red pepper. Stir well, set aside.
- In medium skillet, heat oil over medium heat.
- Add shallots and cook for 10 seconds.
- Add lamb, stir, and cook until no longer pink, about 5 minutes.
- Mix in sauce.
- Just before serving, toss lamb with mint, jicama, red onion, cilantro, lemongrass, ginger, and 1/4 cup peanuts.
- To serve: Put 2 or 3 tablespoons lamb mixture on each lettuce leaf. Top with peanuts, roll, and enjoy.
