Shrimp Tostadas with Avocado Salsa
Completely addictive shrimp tostadas—double the recipe if you're really hungry.
Ingredients
- Avocado Salsa2 tomatoes, diced
- 1/2 onion, diced
- 3 Tbs freshly chopped cilantro
- 2 avocados, diced
- 1 lime, juiced
- 1 pinch kosher salt
- Refried Beans1 Tbs olive oil
- 1 can refried beans
- 1/4 tsp smoked paprika
- 1/4 tsp cumin
- 1 pinch kosher salt
- 1/4 tsp dried oregano
- 1/4 tsp dried cilantro
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 cup water
- Shrimp1 lb peeled and deveined fresh shrimp, tails removed
- 1/4 tsp smoked paprika
- 1/4 tsp cumin
- 1/4 tsp freshly ground black pepper
- 1/4 tsp garlic powder
- 1 pinch kosher salt
- 1 Tbs olive oil
- 1 lime, juiced
- 8 pre-made tostadas
- 1 cup Mexican blend shredded cheese
Directions
- Avocado SalsaCombine all ingredients in a mixing bowl and mix well, set aside.
- Refried BeansPreheat sauce pan. Drizzle with olive oil and add refried beans. Add spices and water.
- Mix well and bring to a boil. Reduce to a simmer and simmer until beans have thickened again.
- ShrimpCombine cleaned, peeled, and deveined shrimp (remove the shrimp tails if you like) with spices and lime juice. Toss well.
- Preheat skillet. Drizzle with olive oil. Sauté shrimp over medium heat until they are pink.
- To AssembleSpread refried beans over tostada. Sprinkle with shredded cheese.
- Top with shrimp and avocado salsa. Serve and enjoy!
